End of Summer Delights | Recipe

It’s that time of year when our summer gardens are flush with delicious ripe produce.  Many Baptist Housing communities offer Residents the opportunity to garden in raised vegetable beds, and from what I have seen the summer has generated many mouth-watering gems! I wanted to share a recipe that would make use of your end-of-summer harvest.

The beauty of this recipe is that it can be easily adapted to whatever you have grown throughout the summer. If you grew zucchini, toss that instead of the eggplant. If you grew any fresh herbs this summer, they can all be added to this salad with great results. Any garden vegetable would really roast quite nicely - think tomatoes, baby potatoes, carrots or even kale!

No need to stop at the produce either. If you are interested in trying a different whole grain, don’t hesitate to swap the orzo for something like buckwheat, spelt, kamut or quinoa! As always, keep food simple and easy.
