It’s hard not to think of harvest, painted leaves and pumpkins when the season changes to fall. Pumpkins are a favourite fall food, and they can be used in so many different ways. They lend themselves well to both sweet and savory dishes and while doing so also deliver high quality nutrition. These fall vegetables are a good source of vitamins B1, B3, B5 and B6. Pumpkins can also meet dietary fiber requirements. They contain many minerals such as potassium, magnesium, iron, calcium, copper and phosphorous.
